Erode in Tamil Nadu produces turmeric with some of the highest curcumin levels in India, and it shows the moment you open the pack: a deep ochre rather than the pale yellow of commodity haldi.
We buy whole fingers directly from farm groups around Erode, boil and sun-dry them on raised platforms, then stone-mill in small batches. Stone milling keeps the temperature low, which matters because the volatile oils that carry turmeric's aroma start breaking down under heat from high-speed industrial mills.
The result is a powder that colours a dal properly at half the quantity you would need from a supermarket jar, with an earthy, slightly peppery finish instead of a chalky one. Nothing is added: no artificial colour, no starch to bulk out the weight, no anti-caking agent.
Use it in everyday dals and sabzis, in marinades where the colour needs to hold through cooking, or stirred into warm milk. Because the curcumin content is high, start with about two-thirds of what a recipe calls for and adjust.
