Most of what is sold as cinnamon in India is cassia: thick, hard, dark reddish-brown bark with a blunt, hot flavour. True cinnamon is a different species, and once you have used it the difference is obvious.

Ceylon quills are thin, papery layers rolled together, pale tan in colour, and crumble easily between your fingers. The flavour is markedly sweeter and more floral with none of cassia's harsh edge. It also contains far less coumarin, which matters if you use cinnamon daily.

Use it whole in slow-cooked dishes and rice, or crumble it into a grinder for baking and desserts where cassia would dominate. Because it is more delicate, you can be generous with it in a way that would ruin a dish with cassia.
